    Okay, total newb here: I understand what makes a red velvet cake red velvet (the addition of an acid like and/or buttermilk that gives it s signature texture and red color from it's interaction with the cacao) but how does this process work for other "red velvet" confections? Do they also rely on the buttermilk reaction or is it just an red dye excuse to put cream cheese frosting on everything? Because don't get me wrong, I will take any reason to put cream cheese frosting on something.

    looks good, I'd eat it, did you throw in some potatoes too? they go well with chickpeas but I guess it can be a bit carb heavy with rice and bread
