My first time ever making these. They turned out great, sadly I’m not a fan of lemon so I think they will mostly be eaten by my dad and brother.
Here is the recipe sorry if formating is off.
Crust1 3/4 cup all purpose flour2/3 confectioners sugar1/4 cup cornstarch 3/4 tsp salt12 tbsp unsalted butter chilled and cut into 1 inch pieces
Filling 4 large eggs lightly beaten1 3/4 cup granulated sugar3 tbsp flour2 tsp lemon zest and 2/3 cup lemon juice ( about 4 lemons ) 1/3 cup whole milk1/8 tsp salt
Set oven rack to middle and heat oven to 350. Get a 13 by 9 baking pan cover with tin foil and grease with butter ( make sure to have foil hang over edge ) process flour, sugar, cornstarch, and salt In food processor until combined about 15 sec, add butter and process to blend 8 seconds, then Pulse until mixture is pale yellow and looks like coarse meal about 3 pulses.Sprinkle Mixture into prepared pan and press firmly with your fingers into an even layer over entire pan and about half an inch up sides, refrigerate for 30 minutes then bake until golden brown about 20
For fillingWhisk eggs, sugar, and flour in medium bowl and stir in lemon zest and juice, milk and salt blend well. Reduce oven temperature to 325° Stir filling to re-blend and pour into warm crust. bake until filling feels firm when touched lightly about 20 minutes. Transfer pan to wire rack let cool for 30 minutes remove bars from pan using tinfoil, cut into squares and dust confectioner sugar overtop if you like.

I borrowed bits I liked from a few different recipes.
I actually doubled the recipe (except for the pasta) but posted this as a base. It can be expanded from here.
Also, I posted the steps in the order I flowed through them. Timing will vary a bit, but that is the basic outline. Feel free to change things up and make it your own.
2 chicken breasts2 tablespoons flour2-4 tablespoons of butter8 ounces sliced mushrooms2 cloves garlic (minced or pressed)8 ounces Gorgonzola1 cup chicken stock1 cup cream1 box penne4 handfuls of spinach (if desired)
Season chicken as desired (I used a spicy blackening seasoning that pairs well with cream based pasta sauces)
Get a wide sauté pan at med/high heat with a couple tablespoons of butter until just starting to brown, and add chicken.
Bring pot of salted water to boil and add penne when it is boiling.
Set oven to 350
Cook chicken until seared well on both sides and then move to oven safe dish and place in oven to finish cooking through.
Add more butter to the sauté pan and add mushrooms. Season with salt and pepper and allow to sauté until well caramelized.
Add 2 cloves garlic to sauté pan and allow to cook for several minutes.
Add 2 tablespoons flour to sauté pan and allow to cook for 1-2 minutes.
Add chicken stock to sauté pan and deglaze the pan for a few moments, then add cream and lower heat to medium.
Penne should be close to done at this point, and can be scooped out (if also doing spinach), or dumped into a colander (if not doing spinach).
If doing spinach also, throw 4 handfuls into remaining pasta water after it returns to a boil to wilt it.
When sauce begins to bubble and thicken, add 8 ounces Gorgonzola and stir until it melts.
Drain spinach then add to sauté pan and taste for salt/pepper.
Add the chicken to pan and allow to simmer until chicken is fully done as well (will depend on thickness).
Not too much of a fan of spinach but damn, that looks delicious

I work at a French restaurant, this loaf and many others like it were made by our awesome baker! They make fresh sourdough, baguette, and cranberry walnut loaves every day as well as burger buns and more. Delicious bread and it looks extra awesome for the holiday!
