    Recipe

    For the grits:

    Bring 2 cups chicken broth1 cup whole milk 1 cup heavy cream 1/3 cup butter to a low boilstir in 3/4 cup uncooked old-fashioned grits and turn down to a simmer cover and cook for 12-15 mins add 3/4 teaspoon salt1/2 teaspoon pepper 1 cup shredded sharp white cheddar cheese or smoked Gouda or whichever cheese you'd like to use. Blue cheese would probably be pretty good too.

    For the shrimp, andouille and sauce:

    Saute 3/4 lb sliced andouille in 1tbs butter until cooked, take out sausage with slotted spoon leaving liquid in pan, saute on high 1 lb peeled/deveined colossal shrimp (13/15) with 1tbs Cajun seasoning or blackening seasoning in same pan until cooked 5-7 mins. Take out shrimp with slotted spoon. In a food processor add 2 canned/jarred roasted red peppers or fire roast 2 red peppers yourself. Deglaze pan with white wine 1/3 cup, add 1/2 cup chicken stock and reduce by half, add roasted red pepper puree, 1/4 cup heavy cream and 1tbs creole whole grain mustard. Add shrimp and sausage to sauce and cook for a few mins. Put grits in a bowl, if grits are too thick you can add a few tbs at a time to loosen it back up. Top grits with shrimp and sausage, spoon sauce on, finish with thinly sliced green onion (not pictured, all I had was parsley at the time). Enjoy!

    Meat was rested for 15 minutes (for the first one to be sliced) and 30 minutes (for the second one). The meat was incredibly moist and delicious. Yes, the mushrooms were properly pan dried!
