    When I was growing up I always had a vegetable and fruit garden that my dad and I tended in our backyard. We tried growing carrots so many times and it was always for naught.

    However, no joke, those look like some excellent carrot tops, don't let them go to waste. I love me some tasty carrot tops. Great for herb garnishes (like parsley, carrot top, and chive) on the tops of dishes, among other things

    I buy several at a time from Costco and felt the same until I learned you can put them in the fridge and they won't ripen until you take them out. Once they are ripe, put them back in the fridge and they stay in "suspended animation" for a while. The skin turns black, but the insides are fine. Bananas are the same way.

    Best way to be sure is to buy them the same day or a couple days before you use them. Disregard visual assessment, feel is everything. Hold the avocado in your hand and give it a firm but gentle squeeze. If it isn't ripe, the avocado won't give at all. If it is over-ripe, it will give easily, and when you open it, it will have those ugly brown marks inside. You want avocados that are firm, but still give a bit when you squeeze. Those will be bright yellow and green inside, won't have hard flesh stuck to the pit, but will still hold their shape during slicing.

    I sort of regard myself as an avocado whisperer.

10. Baked potatoes I made last night

    Ingredients:

    Potatoes of your likingExtra virgin olive oil3 tbsp butterSaltThyme shallots or generic onionBaconRed pepper flakes

    Recipe:

    Skin potatoes and cut thinly to base keeping potato intact (can cut through if you wish, just more difficult to handle).

    Set oven to 375 F

    Melt butter and mix with EVO to coat baking dish

    Wedge diced shallots (alt. onion) into potatoes

    Place dish in oven for 90 min.

    Cook bacon while baking

    Take potatoes out and wedge bacon bits into them and sprinkle thyme, salt, and red pepper flakes onto potatoes and spread butter/EVO mix over potatoes. EDIT spread butter/EVO before sprinkling other ingredients on top so they stick.

    Place back in oven for 30 min.

    Pull out; done.

    Don't the terms have something to do with core temperature aswell? i.e. I believe for medium rare the centre, although red, should be warm, whereas for rare it should still be cold?

    • Myth #7: "Use the "poke test" to check if your steak is done." - Kind of worked for me... the internal thermometer test was subjugated by the above two points... So, I used time and feel... so subjective!

    To be fair, depending on technique (strong radiant, fast flip, sous vide, etc) you can get quite a bit more variation in final products than those shown in the pic. I tend to shoot for an even rare prime rib like consistency across most of the thickness, with a hard sear on just the outside most couple of millimeters.

    I think these pictures are bad. It looks like it was just done by only searing the steaks and not actually letting them cook. To me a rare steak should still be cooked through, but retain the red color. In these the meat looks raw, which is more of what a blue steak should be.

    You should look up who the director of culinary services is at your university and send this pic to them with a (polite!) complaint. See if you can get their attention.

    If you can't, print this pic on flyers and post around campus. Send it to your student newspaper, student organizations, etc. You shouldn't have to put up with this crap. Universities can provide good food cheaply, but they won't make a change unless you make a noise.

    I went to lots of filipino birthday parties when I was a kid. Could you please tell me the name of a dessert: it looked a bit like a mini cupcake, and was spongy, and was sometimes dyed green or pink, but was usually an off-white colour. I loved those.

    I've attempted these 3 times and no matter how long I Leave them in the oven, they never get soft (or crispy). I end up having to finish them off in the microwave which totally dries them out. The first time I don't think I made enough cuts so the past 2 times I've tried to make them look exactly like the picture but no change. I leave them in on 425 for 45 minutes and not even close--what am I doing wrong?

    I have made these several times and they are awesome. You just need to remember to wash them right after you slice them. That gets out the starch. Otherwise you might end up with them sticking together. Learned that tip from a TV show.

    I brined them overnight in a gallon of water, 10 ounces salt, and 1/2 cup honey.

    The dry rub is Meathead's Memphis Dust - minus the salt. They were in the smoker at 235 for about 6 hours, with 2 doses of hickory smoke (about 12oz of chips total). 5 hours in, I brushed on the glaze:

    Mix ¼ cup Ketchup, 3 Tbsp Honey, 2 ½ Tbsp Balsamic Vinegar, 2 tsp Onion Powder, 1 tsp Chili Powder, 4 cloves fresh garlic, 1/2 tsp Garlic Powder, ¼ cup Olive Oil, and 8 dried chilis in a blender. When it's all incorporated, stir in some liquid smoke and bourbon to taste.

    For the last 15 minutes, I cranked the heat to 400 to caramelize the glaze a little. Remove, rest under foil for 10 minutes or so, and enjoy!

    What it looked like on the inside. The smoke ring was more prominent than the photo shows.

    My grandparents had a boat when I was growing up. Me and my grandpa don't eat seafood at all, but my grandma loved it. We used to catch fresh fish for her all the time and she would cook it and eat it for herself while we fished. She even ate an eel I caught.

    We also used to go clamming, where we would walk in shallows and dig our feet under the sand to find clams, then pick them up. We'd bring them to her while she sat on the raft with a knife and some lemons, and she'd shuck them right there and eat them.

    Although I don't like seafood, I can appreciate how great that must be. Also, thanks for the feels with that recollection, neither of them are with us anymore.

    I make these!! For people who want a quick base, try using frozen ready-made pancakes from the grocery store. They're the perfect size for muffin cups. Just microwave them so they're soft and can be molded into the pan.

    2 things, if you buy a chefs knife bigger than 8-10 inches, you're over compensating for your penis size.

    Onions are layered. Cut both sides, remove skin, slice, push down on an angle (fan) begin slicing. True dicing. (no sense on adding a third step) For brunoise, quarter the onions, separate each quarter into 2's and being your slices.

    I love food and I love cooking, but having the right knife has always been my biggest problem. Nothing matches the frustration of slicing up some beef or chicken and having the knife get caught on the meet and change direction on me.     Followed a basic recipe for a New York-Style Cheesecake, after that I came up with the rest. For the crust, I added oats along with cinnamon.I also cooked down some diced apple with butter, brown sugar and cinnamon, and folded that into the filling.For the caramel topping, I melted caramel squares (easier when I don't have all the time in the world), with a couple tablespoons of milk. Topped with toasted walnuts.

    I made these wings for a party tonight and they turned out well but they don't sit well. I highly recommend serving them straight out of the oven if you can as the coating turns pasty which can be unappetizing. The flavors are really good though. I adjusted the recipe by adding some soy sauce for more salt and about a tablespoon of brown sugar for more sweetness. It's unfortunate because I went to the Korean market for specific ingredients like gojuchang and rice syrup. It felt like those two ingredients took a backseat to the ketchup and garlic. In any case, if I were to tweak the recipe a bit more, I'm sure it would be a huge hit.

    I used to think Salt Lick was the end all be all of TX BBQ, then I went to Franklin, and I realized how much more complex, flavorful and downright delicious BBQ can be. The smoked turkey drenched in butter is a thing of beauty, and their brisket is the gold standard for all others to live up to, as far as I'm concerned.

    i've been here. the Ribs were some of the best i ever had and i could eat them everyday. on the other hand, the brisket is just OK and the sausage is nothing to write home about. in fact other than the ribs i think everything else was just, meh. the sides are horrible and are definitely an afterthought at best. i can't understand how a notorious BBQ spot can have such terrible beans and coleslaw. it's a shame.

    TL;DR: Ribs are 9/10 everything else is a 5/10 at best.

    while salt lick is good and all. what makes it special is the experience you get there. the land its on, the herds of people, that pit. BYOB. 3 out of 4 times the food is just good. 1 out of the 4 its great. that said you can find better bbq in just about any town. your friendly central texan.

    Edit: if its been on the food network or the travel channel the place is probably good. but theres probably a place twice as good not too far away.

    To me, it appears that those ribs are getting way too much direct heat.

    Maybe it is the finishing char before they go out to guests, but that is a lot of orders at one time.

    I thought this would be a picture of a home BBQ or competition or something. Immediately knew it was Salt Lick and I only lived in Austin for 6 months. Real Texas BBQ is not sold in stores. :)

    Is it cooked on this grill or just kept warm there?
