    It's really cool how you were able to blend two really trendy decorations. A lot of people, when they try to do that, go overboard and it looks bad because they tried too hard. Your cake makes the two elements (glaze/geode) build on each other and add to the overall aesthetic of the cake! Great work!

    Sorry but I feel like the rocks protruding around the edge kind of ruin it since a cross-section of a geode always shows the distinct layers where the outside is actually completely smooth like a normal rock...

    When you make this, do you pre-cook the rice? Also how long do you typically fry it, do you aim for a crispy texture or just try to dry off the excess moisture?

    I've done fried rice a couple of times but I haven't been successful in getting a nice texture yet.

    Dallas has really stepped up their BBQ game. When I lived there, there weren't a ton of really exceptional spots, but now there are a good number of places where you can get some stellar brisket and beef rib.

    I wish places wouldnt use those horrible metal bowls. Every UK place that sells BBQ or 'American' style food uses them and your food goes cold faster. Plus id rather eat off a clean looking ceramic plate or disposable paper/basket combo than some bent up metal dish.

#9 [Homemade] Blueberry + Lemon Zest Ice Cream

    Hello all -

    Recently, my obsession with making ice cream has resurfaced, and I've been embarking on some adventures over the past few weeks.

    Here is a pretty standard Blueberry that I like to make with some Lemon Zest in there for fun ..

    US measurements

    Base
    1.5 cups whole milk
    1.5 cups heavy cream
    2/3 cups sugar
    1/8 tsp sea salt
    5 egg yolks
    dash of vanilla extract

    In a small pot, heat the dairy, sugar, and salt over medium-low-ish heat (stirring) until it simmers a bit. DO NOT BOIL IT.

    Remove from heat.

    Whisk 5 egg yolks in a separate metal bowl.

    Slowly - and I mean SLOWLY (or else you'll end up with scrambled eggs), pour the heated mixture into the egg yolks WHILE WHISKING the entire time until the mixtures are combined.

    Pour that mixture back into your pot and heat over medium-low, stirring quite frequently (it's a labor of love), until the mixture thickens and coats the back of a wooden spoon. Add the dash of vanilla.

    Once that is thick enough. Remove from heat and strain through a fine mesh stainer into your metal bowl (that you washed), cover with saran wrap, and chill for a few hours. Since it's been freezing here in Chicago, I just put it outside for a bit. Ha ha.

    Blueberry Compote
    2 cups blueberries
    1/3 cup sugar
    1 lemon

    Place the blueberries and sugar into a pan and heat over medium. Soon the blueberries will begin to transform and burst. This is good. Stir occasionally. Turn down the heat to medium-low.

    Take half of the lemon and squeeze into the blueberries - no seeds plz. And then grate the lemon rind into the blueberries.

    You could cook and mash until you'd like; I prefer to keep some whole for added texture in the ice cream.

    Once the mixture has thickened a bit, take it from the heat and put into a metal bowl. Cover and chill for a few hours.

    When the base and blueberry mixtures are chilled, combine them. Enjoy the lovely display of swirling and mixing these delicious creations together to a beautiful purple mix.

    Keep this chilled until you're ready to make your ice cream, and then standard operating guidelines apply for your ice cream machine.

    Enjoy!!! Always open to ideas and evolution to the process. Making ice cream is truly a labor of love, and it's amazing to share with friends and family.

    I made ice cream once, it tasted so good (vanilla + nuts) but it was rock solid when i took it out from the freezer. And I mean rock solid - I bend my steel spoon with it. I didn´t let the mixture thicken enough in pot.

    Apologies to the lactose intolerant.....Easiest ice cream recipe: one carton of ready made custard. Put in a freezer container and freeze for an hour remove and stir well with a fork. Wait an hour and do it again. Wait an hour and do it again. Stir every half an hour to break up ice crystals. This makes amazing vanilla ice cream. Want maple bacon? Add maple syrup and bacon pieces!!
